So I am restocking fridge after the fridge fail of last weeks. So it gave me a chance to think about how I am restocking. This we my husband and I are build freezer stock items. I am making bags of meal starters. I cook many times a week and start with Mirepoix (onions, carrots and celery) small batches to freeze and I always caramelize my onions so I will make small batches of them as well. So I am going to make my start mix in my freeze ready to use for the nights I need an easy meal. More to come next week.

Looks like a good plan! Mirepoix! So new to me. Need to have that prepared ahead of time.
Oh man… those all look amazing! I’ve never tried my own lettuce wraps… adding to my list this week!
Do you know what a mirepoix is? It’s a mixture of onions, carrots and celery. Which is handy to freeze in 2 cup portions to have on hand to make a batch of any kind of soup, any time!
Yes I use mirepoix before at least twice a week so I am familiar with what it is. I have never froze mirepoix before precooked, I am hoping it saves me time, thanks for the advice of 2 cups. I am making batches of caramelized onion separate from the mirepoix.. because I use caramelized onion them often for other things (would prefer not to have to wait 20-30 for onions) so I am going to try to freeze them as well.
I never thought of making cooked mixed veggies ahead of time. Great idea
I really need to start making meal plans! Everyone else who does them inspires me!
Those lettuce wraps look delish! I need to get me a Ninja Cooker! Love all those recipe ideas!
