Cheddar and Corn Chowder: Dinner is a a stressful time of day for any family. Getting a good healthy meal quickly and easy can be difficult. Knorr and Eagle Giant asked me to try out one of their recipes. Knorr Cheddar and Corn Chowder is a the recipe I chosen because we are a soup loving family. The soup was a big hit with my family my daughter and her best friend loved the soup asking for more.
This the recipe is so simple and tastes great. In 10 minutes I had a lovely dinner for the family. Knorr is available at Giant Eagle.
Cheddar and Corn Chowder with Knorr
- 2 cups water
- 2 cups milk
- 2 cups diced ham
- 1 package Knorr® Rice Sides™ – Cheddar Broccoli
- 1 medium red bell pepper, chopped
- 1 can (8.75 oz.) cream-style corn, undrained
- 1 can (4 oz.) chopped green chilies, undrained (optional)
- 1/4 tsp. salt
- 2 Tbsp. chopped fresh cilantro
- Crumbled queso fresco cheese
Directions
- Bring all ingredients except cilantro and queso fresco to a boil in a large saucepot, stirring occasionally.
- Reduce heat and simmer about 10 minutes or until rice is tender, stirring occasionally.
- Serve garnished with cilantro and queso fresco.

I used to use these sides a lot when I was first on my own and had no idea what I was doing in the kitchen. Made it so I could eat something other than cereal for dinner!
Heather- I usually make my soups from scratch. Which means we tend to eat later due to the timing of prep and cooking to make the flavors more robust. It was nice to make an easy meal that the kids loved which also meant less hours int he kitchen. I would have never though of using the Knorr packets. It was great to learn of the options.
