Easy Cheddar and Corn Chowder with Knorr Sponsored by Eagle Giant

 

cheddar corn chowdwrCheddar and Corn Chowder: Dinner is a a stressful time of day for any family.  Getting a good healthy meal quickly and easy can be difficult. Knorr and Eagle Giant asked me to try out one of their recipes. Knorr Cheddar and Corn Chowder is a the recipe I chosen because we are a soup loving family. The soup was a big hit with my family my daughter and her best friend loved the soup asking for more.

This the recipe is so simple and tastes great.  In 10 minutes I had a lovely dinner  for the family.   Knorr is available at Giant Eagle.

Cheddar and Corn Chowder with Knorr

  •     2 cups water
  •     2 cups milk
  •     2 cups diced ham
  •     1 package Knorr® Rice Sides™ – Cheddar Broccoli
  •     1 medium red bell pepper, chopped
  •     1 can (8.75 oz.) cream-style corn, undrained
  •     1 can (4 oz.) chopped green chilies, undrained (optional)
  •     1/4 tsp. salt
  •     2 Tbsp. chopped fresh cilantro
  •     Crumbled queso fresco cheese

Directions

  1.     Bring all ingredients except cilantro and queso fresco to a boil in a large saucepot, stirring occasionally.cheddar corn chowercheddar corn chowder
  2.     Reduce heat and simmer about 10 minutes or until rice is tender, stirring occasionally.
  3.     Serve garnished with cilantro and queso fresco.chedder corn chowder

Menu Plan Gluten Free, Red Meat Free, and Nightshade Veg Free

girl making pizzaMeal Plan Monday:  So the new Gluten Free, Red meat Free and No Night Shade Veggies is interested.  Then my husband added no dary so no cheese.. (sigh) It is had so I am trying to be accommodating but still working on a plan.   The reason because of his severe  psoriasis.

He decided to remove dairy after he was starting to have pain again in his hips.  He was not drinking milk so it was the cheese.  I did purchase vegan cheese ok.. Scary.   Very expensive and tastes like the cheese you find between the Lance (orange)cheesy crackers.   The other mozzarella veggie cheese we purchased.. I think he was more unhappy.  I think we might try nutritional yeast for the nutty cheese flavor.   I think I have to keep on looking.  Almond silk Yogurt is good.. we sound it at Trader Joes and it dairy / gluten free.

It has been a struggle and my husband knows I am trying to find a happy medium.  He says make for the kids,  I will make for myself.  So I am trying to do one dish for all and then make one each for the gluten free Aikens and the rest of us.   It worked will with chicken noodle soup and also the Linguini and clam sauce. Monday : Gluten Free Panda Orange Chicken  From Gluten Free in SLC

Tuesday: Garlic Shrimp and Lemon-Saffron Millet Pilaf

Wednesday: Turkey White Bean Chilli and Gluten Free Jalapeno Cheddar Cornbread 

Thursday: Dads night

Friday: Green Chilli Chicken Enchiladas adapted from Kiss Recipe  the   Las Palmas® Mild Green Enchilada Sauce Appears to be gluten free.. but not night shade.

I am trying to be considerate of my husband.. but still a work in progress.

 

Also I did this week make my daughter join me in the kitchen to make biscuits pizzas:  I feel we need some food normalcy.

Grand Biscuits Pizza

  • Simple Pillsbury grand biscuits-  Split in 2 so a can of 8 biscuits makes 16 pizzas
  • Mozzarella
  • Tomato sauce

Split biscuits, add sauce and cheese, bake 350 for 15 minutes.

This was not for my husband but for my kids to eat they like the biscuits way more then the English muffin version.

 

Next Wednesday is Ash Wednesday if you are considering a meager meal try making this simple bread in the bag with the kids. bread in a bag

Menu Plan Monday Combining Gluten Free, Red Meat Free, Nightshade Veggie Free

tacos My husband has been gluten free, red meat free, and night shade veg free (tomatoes) for the last month and 1/2  because he is trying to make restart his body because of severe Psoriasis.    Jeff- My husband has been struggling with Psoriasis and Psoriatic arthritis for the last 25+ years.  He has been in and out of remission,  the last few years he has reached the end of the auto immune drug list, so remission seems as if it is a dream.  He also has tried many different alternative medicine and treatments. We have done research on what can help with his body to reduce the effect  Psoriasis and Psoriatic arthritis. We found out that many people who suffer from Psoriasis have a sensitivity to gluten, and removing red meat and nightshade vegetables help with the inflammation caused by the auto immune diseases.

Finally  1st week in January : he woke up and decided to do a Juice / smoothie cleanse… I will blog more about that, I did not want to share the pictures on a food post.  He is 100% covered in Psoriasis, so you can get a mental picture.   I wanted to work through it as a family before sharing the progress on my blog.  Now he is back on solids, and I feel it is a good time to share because it appears to be a permanent lifestyle change in our family.

I have found it to be be extremely hard to decided what to cook for him and the kids.  I am a fully loaded food  girl,  who loves tomatoes,meat, cheese, if I can cook it I will make it.  I am sure  could use some of the healthy eating Jeff is doing.    I am trying to combined meals but I am have little or no success and basically he has been cooking his own meals.  I decided, my hang up has been with the more dishes and pots,  or least I am going with that.  This week I am going to try to be considerate and combined more Gluten Free Meals.

I am sure your other question to me is this drastic change to eating helping???  Yes, things are calming down in his skin. I will post more about it on a separate post.

What he is eating:

Meat

  • Chicken Limited
  • Fish Limited

Milk

  • Cream Only in his coffee (almond milk)
  • Cheese- trying to stay goat cheese not milk

Flour/grains/carb

  • Non gluten pastas
  • Rice

Sugars

  • No Refined
  • Honey
  • Monk Fruit
  • Agavae
  • Maple Syrup

Veggies:  all but the (NO NightShade Veggies)

 Meal Planning For Psoriasis

  • Monday: Chicken Noddle soup (noodles on the side)
  • Tuesday: Pizza: Make my own crust for us and Gluten Free Pizza dough  I will have tomato sauce for us and hot sauce for his I might do a garlic spinach pie for Him
  • Wednesday : Linguini and Clam Sauce (2 different noodles)
  • Thursday : Fish, mushrooms, spinach, rice (Make extra Rice for Taco night)
  • Friday: Tacos Reef for kids and lentil “meat”   Homemade re-fried beans gluten free, rice

 

Tip : Use rice in your Tacos My kids cant have Taco Night without Cuban white rice.   I will share my Cuban rice method next week.

Also forks can hold the tacos up. tacos with rice

mushroomsSo late night Sunday watching the Grammys.  I think that Taylor Swifts dress was awesome.  I loved Phrells performance with Stevie Wonder.   I loved this years prefromances because of the mix of music and the respect for thoes who trail blazed before them.   I always love the glitz of  Grammys makes me want to get a fancy dress and go out.

Meal Menu Plan  Monday:

Monday: Taco LasagnaTaco Lasagna

Tuesday : Pork chops and Apple sauce

Wednesday: Mini Picadillo Empanadas

How to use Buddha Hands Fruit

Buddha HandsI picked up a Buddha hand fruit at the grocery store,  and first I was what on earth?  I smelled the Buddha hand fruit yummy it is citrus.  According  Wiki Buddhas Hand  is to the internet it is one of the oldest, used in China and Japan for  cooking, to scent clothes, as a gift for good fortune.   It is like all rind and no pulp or juice  inside.  So think lemon zest.

The Buddha’s hand grows on a tree and is straight as it ripens it blooms out as shown above.   The flavor is similar to a lemon but not as bitter as other citrus fruit rinds.

How to Use Buddha hand fruit:

  1. Steep Buddha hand fruit in water  for lemon favor tea-  We are loving it in tea
  2. Slice the Buddha hand thin add to asparagus lemon , zest it
  3. Add Buddha hand fruit to  a plastic bag and the sugar takes on the flavor .. great for lemon aid  (or prepare like a Myers lemon)
  4. Slide and bake with chicken for citrus flavor
  5. Add to sangria .. at Halloween it looks like fingers.. spooky
  6. Use as a bitter in drinks
  7. Add to Vodka to make a citron
  8. Dry out and put in  cloth bag to scent your clothes.

This is a very conversational fruit so put it on the table and enjoy!

Meal Planning Monday

mushroomsAn week and other Meal Plan.  This plan is different this week because I am only cooking for me and the kids.  My husband is doing a juice fast,  but that is another blog post for a different day. So when meal planing this week I took a few things into account.  1- I can make thing my husband does not enjoy like tomato sauce.  2. I can do sandwiches  where my husband does not request I make more complex meal I do when he is eating,  so simple is my thing this week.

Monday: Spaghetti and meat sauce and salad

Tuesday: Grill Cheese and Tomato Soup

Wednesday: Frozen Lasagna with cucumber side

Thursday: Homemade chicken fingers, tater tots and salad

Friday: Homemade Pizzas

Healthy Snack Ideas

chocolate_covered_clementines_013_001-4aThe best easy Healthy snack ideas from the web.   This time of year I try to focus on me and healthy eating, like most American.    The new year is a fresh start and time to restart.  I know we all know to eat more fruits and veggies,  less calories higher fiber.   For me I am a chip eater followed up by sweet.  Lately,  I have been grabbing a few pickled green beans to curb my salt craving. But my family needs other sweet options.  Eating a piece of fruit is best but sometimes one need more than just an apple. Here are some great ideas and recipes for easy healthy snack both savory salty and sweet.

Like the The Comforts of Cooking post.

Menu planning Monday

mushroomsMenu Planning Monday: This week I am with out a car.  So I have to walk for a grocery store  or try to eat through some of my pantry.  I feel like a new year so I want a new start to my kichen.  So I am going to eat through my pantry.

Monday: Goulash  ground beef, cans of beans, carrots and potatoes

Tuesday: Eggs quiche with ham and spinach

Wednesday : My Easy Seafood Soup

mushroomsMenu planning went out the door with the holidays. This week with the new year I am cooking again. My sister is visiting so I am trying some new recipes and making some new items for brae I fast.

  • Monday : pizza because my sister is visiting , I am also making this mandarin orange pudding whip.
  • Tuesday New Year’s Eve I am making a spiral ham cooked in hard cider and  I am also dipping clementines in dark chocolate
  • Wednesday New Years I am making split pea soup my recipe found at 5minutesformom site
  • Thursday meatball bogies and tater tots
  • Friday taco night with white rice, retried beans
  • Saturday night fend for your elf

Menu Plan Monday

So this week is a very busy week,  with  Christmas around the corner BabyPop Superhero capes my company,  I am very busy sewing non stop.  I found that last week me not recipe planning it was almost impossible to get dinner on the table.  So this week I am back doing my weekly recipe meal Planning.  So my family does not starve.

I have to tell you I am on an easy recipe kick.. One Pot or casserole creation are my thing for the next 2 weeks. For easy and quickness.  Check out the Casserole Pinterest boards for some Ideas.

I found this Pork Chop Casserole from Kraft.Canada recipe this weekend and made it last night.  I did add Sweet Potatoes,  because I had them and it was Yummy.  I would use thick cut Pork chops if you will cook it for the 1 1/2 .. I only cooked it for 1 hour,   My pork chops were thin.

Menu Plan:

Monday:  Hearty Homestyle Chicken Casserole  From Moms Who think   I like it because to pan fry the hashbrown 1st

Tuesday:  My Pulled Pork

Wednesday: My Husband Night

Thursday: Chilli Night  My award winning blue Ribbon Holiday  Chilli

Friday: My Chipolte  knock off night,  Use left over Pulled pork, add Rice, Beans on Tortillas.
