Menu Planning Monday

mushroomsThis week is a busy week.  We are going alot of places and I am release into the field for my new job .. Hopefully.   The kids are in and out.  My  13 year old son will only at meat or yogart.  So is a fun week.

Tuesday: Perogies and Kielbasa

Wednesday: Ham and egg quechie

Thursday: Ravioli bake

Friday: Fried rice

Chicken Taco Salad with Avocado Dressing #FreshTake sponsored

disclousure statementtaco salad Every night I am always looking for a new Fresh Take on dinner  that is healthy and a crowd pleaser for my family.  When #CollectiveBias asked me to try Kraft Fresh Take Meal Kit and create a family meal that we would enjoy. I was excited create a Chicken Taco Salad with creamy Avocado Dressing using Kraft Fresh Take Southwest Three Cheese.   This meal was a favorite with my whole tribe,  great tasting chicken with veggies and homemade baked tortilla chips.    I was pleased dinner took a 1/2 hour from start to finish to make. Another plus is the kids could build the salad themselves, so were little chefs also.   All left satisfied and happy.

Chicken Taco Salad with Avocado Dressing

  • 1 package of Kraft Southwest Three Cheese
  • 1 1/2 lb of chicken(4-5) breasts  thawed or fresh
  • 1 head lettuce or your choice of mixed greens in a bag
  • 1 can of sliced olives drained
  • 1 can of corn drained
  • 1 can black beans drain and rinsed
  • 1 pepper (green, yellow, orange or red the color of your choice)
  • 2 cups of cooked rice optional
  • 4 tortilla  (or a bag of chips)
  • oilingrediants
  1. Open the package of Fresh Takes,  the breadcrumb side and cheese sides are separated so they stay fresh.  When you open and pull apart  the bag separator  then blending the 2 sides.fresh takes
  2. Take your chicken moisten (with water or egg) and place in bag, seal shake to coat.fresh takes
  3. Place on baking sheet that has been sprayed with non-stick cooking spray. fresh take on chicken
  4. Cook as directed on package. Discard leftover coating. cooked fresh take
  5. While the Fresh Take Southwest Chicken is cooking,  Make the taco chips.  Cut the tortilla chips into strips.
  6. Brush with oil, season with salt and pepper, bake in oven for 10 minutes. tortilla chipsTo make the avocado dressing

Avocado Dressing

  • 1/4 cup of mayo
  • 1/4 cup sour cream
  • 1 ripe avocado peeled
  • 2 tablespoons of lime or lemon juice
  • salt / pepper
  • Milk 1/2 cup of more depending on how thin you want your dressing

Blend in a food processor until smooth .. or mush the avocado into the other ingredients.avocado dressing

  1. Now it is time to build your salad  with the amazing Fresh Take Southwest Three Cheese Chicken.
  2. Stack the tortillas, lettuce, rice, black beans, olives, corn, tomatoes, peppers, and chicken.
  3. Add dressing and enjoy.

The Result:  The chicken is a little spicy,  the dressing added a cooling and dipping factor.    My children loved the build your own aspect of this dinner.  My daughter version on the chicken taco salad .. a taco man .. then he had a brother,  she ate 2 helpings.  I consider that a winning meal, thanks Kraft Fresh Takes Meal kit. kids taco salad

Kraft Fresh takes was very easy to use and all the instruction were located right on the package. You can also use the #FreshTake with other proteins like pork or fish.   The Kraft Fresh Take was so easy to find at my local Walmart it was located in with the shredded cheese in the dairy area. So this week is a very busy week,  with  Christmas around the corner BabyPop Superhero capes my company,  I am very busy sewing non stop.  I found that last week me not recipe planning it was almost impossible to get dinner on the table.  So this week I am back doing my weekly recipe meal Planning.  So my family does not starve.

I have to tell you I am on an easy recipe kick.. One Pot or casserole creation are my thing for the next 2 weeks. For easy and quickness.  Check out the Casserole Pinterest boards for some Ideas.

I found this Pork Chop Casserole from Kraft.Canada recipe this weekend and made it last night.  I did add Sweet Potatoes,  because I had them and it was Yummy.  I would use thick cut Pork chops if you will cook it for the 1 1/2 .. I only cooked it for 1 hour,   My pork chops were thin.

Monday:  Hearty Homestyle Chicken Casserole  From Moms Who think   I like it because to pan fry the hashbrown 1st

Tuesday:  My Pulled Pork

Wednesday: My Husband Night

Thursday: Chilli Night  My award winning blue Ribbon Holiday  Chilli

Friday: My Chipolte  knock off night,  Use left over Pulled pork, add Rice, Beans on Tortillas.

Menu Plan Monday Aug 27

mushroomsSo this week is the last full week of no school at least for my daughter.  My sons school is delayed due to a problem at the school.  So I will have him home till the 16th,(kinda inconvenient for working)   I know right.. I am look forward to alone time with him.  This week I am taking it “Easy” in anticipation for the busy school year. We do how ever have 3 night of volleyball this week.   So I am back to crockpot planning in hopes to get something in her belly for before she goes to volley practice.

Monday:  Easy Kielbasa, Frozen perogies, and onions  done in my Ninja cooker.  I know I did it last week but my family loved it and  bought many because they were on sale

Tuesday: Taco Lasagna

Wednesday:  Chicken and Rice in a crockpot with mushroom soup (2 cups of rice, 2 cans of chicken broth, 1 cup of golden mushroom soup)

Thursday: Meatloaf Muffins and Mash

Friday Homemade Pizza and Tomato Salad

Leftover Chicken Ideas

girl near a pongLeftover Chicken Ideas for those night they have chicken in the fridge:  So this week I am still adjusting from coming off being away and the kids being home it is the 3rd week of the summer.  My Sister In law had a large 4th of July party this weekend. Ok so it was on the 6th.  The kids had a great time and the food was very plentiful.   I made my pickled cauliflower salad and pickled onions.  For dessert I brought Lemon Sugar cookies with Lavender,  which I will be posting about later this week.  My sister inlaws family provides all the meat,  so standard hamburgers and hot dog but also 80 split chickens.    YES I said 80 Chicken split!!!  160 halves…  So Guess what I got to bring home.. 4 chicken halves.. yummy and they don’t eat dark meat.     So Guess what we are eating this week..

It was the 1st time I took some one along with us tot he farm.  My son best friend.  He loved the pond.  outdoors_001 (101 of 5)We also got to use the Natural Bug Spray that I posted about last week super simple to make and kept the Flys and Mosquitoes away.  I loved the fact it was natural.

Lemon Chicken Noodle Soup #TastyTues

So you have your basic homemade  Chicken Noodle Soup, but how about mixing it up for the summer,  make a light summer version.  Lemon Thyme chicken noodle.  not your average chicken noodle a cut above the rest,  also the lemon adds a little extra vitamin C.  Plus make it that left over chicken from the grocery store.  I love the pre-made rotisserie  chicken I always buy 2 when every I go to a big box bulk food store.

Lemon Chicken Noodle Soup

  • 3 celery stalks diced
  • 3 -4 carrots diced
  •  2 onions diced
  • 5 cloves garlic chopped
  • 1 bag of extra wide egg noodles
  • 2 quarts of chicken broth
  • 2 lemons (juiced)
  • 1/4 of thyme
  • 1 chicken cooked picked off the bone and diced (rotisserie kid you get precooked at grocery store) or chicken parts cut up to bite size peices
  • salt
  • pepper to taste
  • condensed chicken stock (optional)
  1. In a large pot add onions, celery , and carrots cook till translucent, salt and pepper to taste
  2. add chicken broth, bring to boil
  3. add lemon juice and thyme, extra chicken condensed stock
  4. add chicken to boil water if uncooked allow to cook till chicken is full cooked
  5. bring to boil
  6. add egg noodles for desired time required on package

Sesame Chicken Legs #TastyTuesday

My kids love chicken legs.  They are great because no cutting of meat is necessary.  So I am always thinking of new ways to serve my family chicken legs.  I recent learned that the local Philadelphia Target near me is now carrying fresh Gold’nPlump chicken which is  all natural, wholesome, delicious chicken.   Gold’nPlump also offers chicken legs so I came up with a new way to serve them to the kids and they were a huge hit.

Sesame chicken legs

  • 1 package of Gold N Plump  chicken legs
  • ½ cups of soy
  • ¼ of Dijon mustard
  • 1 tbls olive oil
  • ¾ cup honey
  • 2 tlbs of spoon of toasted sesame
  • Clove of garlic
  • 1 tsp of ginger

  1. Parboil your chicken leg in water for 15 minutes till cooked thoroughly.
  2. Mix remain ingredients in a zip lock bag to make the marinade
  3. Then place cooked  chicken legs in the marinade
  4. Let legs marinate for 30 minutes
  5. Heat a sauté pain us a little oil or butter in pan to avoid sticking brown the chicken legs slightly.
  6. Then pour marinate in pan and allow the chicken to finish cooking allowing the marinate to reduce and thicken to use as a sauce
  7. Remove and serve with favorite side.

Chicken Lettuce Wraps and Bacon blue cheese Lettuce Wraps

I needed an health-ish option for football Sunday Lettuce wraps 2 versions Blue cheese lettuce Wedge wrap a take on the steak house salad and a Fire Cracker Chicken lettuce wrap  which is spicy, sweet and sour.  These wraps are a similar favor to wings but deconstructed in to 2 options.  They have the heat in one and the blue cheese in the other.   Something green,  Lettuce Wraps easy to pick up and eat.  Great finger food.   Football Foods grown up.   I also have to say even my 10 year old like them.

Fire Cracker Chicken Lettuce Wraps (Shown above)

  • 1 or2 boneless Chicken breasts
  • 1 head of Boston Bib lettuce
  • 2 cups Orange Juice
  • 1 tbls Honey
  • 1 lime
  • 1 blood orange
  • 4 tbls Soy sauce
  • ¼cup rice vinegar
  • Lime
  • Sugar
  • Cayenne pepper
  • 1 package of shredded coleslaw
  • Salt pepper

Prep:

  1. In a plastic bag, 1 cup of OJ, 2 tbls of Soy,  1-tbls spoon of honey, 1tbls of Cayenne pepper salt pepper,  Place thawed chicken in Marinade for 2-3 hours or overnight.
  2. Separate bowl place ½ a bag of coleslaw, 2 tbls of sugar, ¼cup rice vinegar , juice of a lime, pinch of salt mix sit for 2-3 hours  over night.

Cook:

  1. Fry or grill chicken till cooked,  add marinade in pan while cooking to keep moist.  Remove chicken to a separate plate allow to cool so you can shred with a fork.
  2. Deglaze the chicken pan with 1 cup orange juice and  2 tbls soy sauce to make a reduction
  3. Clean and wash lettuce keeping leaves in tack (bib lettuce is great for wraps because the are flexible

Assemble:  Lettuce, coleslaw, shredded chicken , drizzled with oj/soy reduction, top with blood orange

Blue Cheese Bacon Wedge Lettuce wraps

  • 1 head of Boston Bib lettuce
  • Solid blue cheese  ¼ lb (sliced thin, shaved)
  • Thick cut bacon
  • Plum Tomatoes diced
  • Olive Oil
  • Balsamic Vinegar
  1. Clean and wash lettuce keeping leaves in tack (bib lettuce is great for wraps because the are flexible)
  2. Cook the bacon draining fat once cool slice in to thin strips
  3. Assemble
  4. Lettuce, tomato, blue cheese ,bacon, Drizzle with oil and vinegar-  Wrap and eat

I like the balsamic in a spray  container so it is evenly distributed I found mine at Trader Joes

  • Variations- add sour cream  or an hard boiled egg- for a cobb version
