16 Must have Food Items for $38 to make different 25 meals.  I found that having staples in your pantry / fridge you can make many meals that are healthy and your family will enjoy.  Here is my list:

  1. Onions 2.99
  2. eggs 3.49

  6. chicken legs 3.99
  7. can tomatoes 1.00
  8. Italian Dressing 1.50

Here are 25 Meal Ideas:

Breakfast:

  • French toast
  • Eggs
  •  Cheese omelet
  • Hash browns
  • quiche

Lunch

  • Grill cheese
  • Salad with lettuce , carrots, onions, cheese, hard boiled eggs, Italian dressing
  • pasta salad, tomatoes drained, onions, cheese,Italian dressing
  • egg salad, make your own mayo (egg yoke, oil, splash of Italian dressing)
  • Chicken salad (used pulled chicken)

Dinner

  • Chicken and rice bake
  • Baked Chicken with baked potatoes, carrots
  • Fried chicken, french fries, and Glazed carrots
  • Pulled chicken (removed skin, brown chicken place in crock pot with Italian dressing and one cup of water, and choped  onions cooks low 4 hours), serve over rice and
  • Chicken noodle or rice soup use pulled chicken for broth and chicken add carrots and more onions
  • Fritta eggs milk  tomato, carrots onions, cheese
  • Spaghetti with homemade sauce
  • Potato soup, onions, carrots, milk, chicken broth
  • Homemade Pizza Sandwiches
  • Creamy chicken and rice soup
  • Mac and Cheese
  • Egg Drop soup
  • Fried Rice with chicken carrots onions
  • chicken pot pies
  • Home Biscuits and gravy
  • Noodle bake
  • Baked ziti
  • Loaded baked potatoes

You will need to stock up on chicken but you can make any meal listed above.   Jusr keep the pantry and fridge stocked and you will always have a go to.

I have had the privilege see Martha in person 2 twice. Both during a filming of her shows.   She is amazing to watch live, she is force, witty,  and very funny. Watching either her cook or create is like having you elegant aunt in the room.  You can feel the refinement you want to learn and duplicate.

This weeks is crazy summer busy, with my non stop super exhausting schedule during the summer. I need dinners that are easy and get my kid to the next.. swim meet, volleyball  practice, or playdate.  I really love making meals that I can make extra food and use it for the next meal simplify my life. Sides are my favorite,  Rice that becomes fried rice.  Mash potatoes that become the top of my Sheppard pie.

Monday :Traditional Polish Golabki Recipe (cabbage Rolls)   I always  make 2 trays of this recipe because it takes some time to make them .

Tuesday : Spaghetti  fresh tomato sausage sauce

Wednesday: Tacos in in a bag

Thursday: Hot Dogs and Tator tots

Friday: Chicken and Homemade Mash potatoes

Saturday: Shepard’s Pie

Chef Marcus Samuelsson cooking tips:  This past Thursday I when to a Macy’s Culinary Council Table talk I was able to hear Chef Marcus Samuelsson speak.  He was really charming and fun.  It was a great free event for the public. The chefs food was super yummy and the presentations of the dishes was spot were beautiful  all the actualy dishes were made out of bamboo, so cool.

  1. To get the best fresh fish always ask fish monger for Sushi Grade fish
  2. Always ask for fish with bone in.  When you take the bones out add to water and make your own stock in about 2 hours of simmering
  3. With stock you make add some miso, then add veggies, tofu, or noddle for a simple meal
  4. When you make any meal you can think about left overs for your next meal
  5. Left over rice: rinse rice toss in Rice Flour or corn starch then pan fry with oil or butter for crispy fried rice add veggies and protein
  6. Want a more vegan diet try pecans w/ sour cherry’s fry them up great meal
  7. Spices and seasoning  keep in darkroom or dark space
  8. Try grinding your own Chili peppers,  flavored Salt,  pepper, or Curry
  9. Try a store bought mole for a easy meal with big flavor great on chicken
  10. Cooks tool must have wok, cast iron pan, Dutch oven, non stick pan
  11. Cast Iron pans do not put in dishwasher,  the older the pan the better season with oil and air dry

He also spoke about a creating a spiritual relationship with your food. That the best food invokes emotion or a memory.  He mentioned if you grew up the 80’s it might be tacos.. I had to laugh because that reminded me of my childhood.  Taco night is the best.

I really thought the event was fun and we learned many new ideas.

How to make Easy Asia Coleslaw Salad : This up coming weekend is Memorial day.   I am also going to be out at various end of the year events for various groups.  I have to Menu plan for my busy week, including having kids over and off school, (my kids are also off for elections day.)  Summer is coming too fast,  I have to really come up with some great meals that don’t heat up my kitchen.

So as we plan for weekend parties. I love an easy salad for Memorial day.   This is a easy favorite salad, make no mayo so it does well during hot summer days.

Salad
1 1/2 cups shredded purple cabbage
1 1/2 prepared cole slaw, shredded
1 cup of shredded carrots
½ cup green onions chopped
1/4 cup sesame seeds
1/4 cup sunflower
2 pkgs. Ramen Noodles
½ cup butter

Dressing
1/2 cup sugar or splenda
1/4 cup honey
3 Tbsp soy sauce
1/2 cup veg oil
¼ cup apple cider wine vinegar

  1. Melt the butter in a saute or frying pan melted butter for Asian Cole Slaw Salad  easy
  2. Toss the broken ramen in the butter to toastedRamen Asian Cole Slaw Salad  easy
  3. Chop the green onions in the Mix the salad together , add toasted ramencarrots in Asian Cole Slaw Salad  easy
  4. Blend the dressing  in a cover lid container
  5. Dress salad before serving Asian Cole Slaw Salad  easy

Menu Planing This week is a beautiful weather.  It makes me want to plant and grow veggies. We went to my husbands family farm this weekend. As we drove home we stopped by a plant nursery purchased veggies, a well established beef steak tomato plant.  I also purchased 4 different peppers red, green, yellow, and purple.   The finally veggies is zucchini  which I will really enjoy during the summer,  my kids really like roasted zucchini almost like a chip.

I am really looking forward of becoming one with my food, since I love to cook.  I have great plans to do it every year, then vacation happens and they all die.  So this year we are not going away so I am hopping I can keep my crop going.  On Pinterest I have found some great ideas for simple irrigation methods.  Also I have been reading about dirty and how to have great healthy rich soil.  The concept of growing your own veggies seems like a great idea.. but it also seems like it can be expensive,  if you don’t figure out some great DIY methods.  Check out on my pin board some great ideas.

Venison and Broccoli

Venison and Broccoli:  This week I am enjoying some much need down time. So I am making easy meals that taste great and a crowd pleaser.  This week is filled with kids off school and leisure time,  I don’t want to spend all day cooking.  So I check out what I have in the freezer.   I have some Venison in the freezer and it is a great meal to do some prep and the family loves it.

Venison and Broccoli

Venison and Broccoli

  • 2 lb of venison
  • 1/4 cup  soy sauce
  • 4 tablespoon of honey
  • 1 teaspoon of powdered ginger
  • 1 tablespoon of barbeque
  • 1 teaspoon of minced garlic
  • 1 -2 heads of broccoli
  • 4 cups of rice
  1. Trim and cut the venison in to bite size pieces removing any veins or silver skin, cut cross grain place in a gallon zip lock
  2. In a separate bowl mix together soy, ginger, honey, barbeque, garlic- mix them together and pour over meat
  3. Mush into meat  ( marinate for 4 hours  or overnight) in fridge
  4. Dinner time Start Rice  according to direction package
  5. Cut broccoli in to bite size pieces put in a saute pan with 1/4 cut of water to steam)
  6. Remove broccoli when slight tender
  7. Tum frying pan on high and cook venison in 2 batches on quick heat caramelizing meat med rare
  8.  Add meat to broccoli and deglaze the pan- add liquid to meat and broccoli and serve over rice
