Menu Planning Monday

mushroomsMenu Planning Monday This week I will being on a trip the kids overnight which means.. My husband has to fend for himself for 1 night.. he follows a gluten, dairy, red meat, night shade vegetable free diet.  As a family we had omitted red meat and some of the night shade because it makes life easier.  I will make my husband separate dishes but some times it is easier not to make more cooking for me.

So as a family this means we are eating healthier.  Our diet has more rice, veggies, sweat potatoes.  What we don’t eat much..white potatoes, red meat, peppers.

I do buy some night shades, red peppers, tomatoes, and finger potatoes because My daughter and I will eat them

Menu Plan

Monday : Fish, spinach, roasted cauliflower

Tuesday: Fend for yourself for my hubby

Wednesday: on the road dinner

Thursday: Orange Chicken GF  with fried rice

Friday: Pulled pork tacos

The Best Gluten Free Meatloaf Muffins

gluten free meatloafThe Best Gluten Free Meatloaf Muffins:  Since my husband diet has changed to Gluten, nightshade, red meat, and dairy free to help with his psoriasis diet.  I love making meatloaf my kids love meatloaf  it was imperative that I come up with a new meatloaf for all.  I have been making meatloaf muffins for my family because everyone likes the outside of the of the loaf,  you know the blacken caramelized meat, not pretty but super tasty.  Also when you cook a meatloaf muffin they cook in about 30 minutes.  This is a great meal to make with kids.  Pair with tater tots of homemade baked sweet potatoes fries (nightshade free) . Yummy

Gluten Free  Meatloaf  Muffins

makes 5-6 muffins

  • 1 lb of ground Turkey
  • 1 lb of Ground pork
  •  1 1/2 cups of corn chips
  • 1 egg
  • Barbeque (for non psoriasis diet)
  • Honey (for psoriasis diet)
  • Onion soup mix  or  make your own below depended of gluten sensitivity

Make your own Onion Soupish mix

  • 3  tbl of dried minced onions or 1 small fresh onion min
  • 2 tablespoons of soy sauce
  • 1/4 teaspoon pepper
  • 1/4 teaspoon salt
  • 1/2 teaspoon of cumin
  1. Preheat oven to 375
  2. Spray 6 texas muffin tin with non stick cooking spray or line with parchment
  3. Place corn chips in a bag and crush
  4. Mix Turkey, pork, egg, crunched corn chips and onion soup mixture in a large bowl Go head use your hands
  5. Place a handful of meat loosely formed in each muffin (do not pack the meat will not be as good trust me)
  6. With your finger poke a hole down the center of the muffin (this helps to avoid shrink)
  7. In hole fill with barbeque or catchup (for those who can eat nightshades)
  8. OR   Drizzle on top Honey for Restricted diet person (I would NOT fill the hole with honey too sweet)
  9. Cook for 30 minutes or until dark on top
  10. Remove allow the meat to rest for 10 minutes

Menu Plan Monday

mushroomsMeal Plan Monday:  My adventure in feeding my family and providing my husband a Gluten, Dairy, Nightshade veggie, and red meat free diet.  My husband Jeff has auto immune The reason because of his severe  psoriasis. He has been doing this very limited and avoiding diet since January, there has been improvement.  It does pose some challenges as a family,  while I try to cook for everyone at once it doesn’t always work.  I am always on the search for creative ways to make the same food different.

Mostly I get tired of the physical dishes/pots (I hate washing them)  and I miss going out for real pizza.  It is probably better Pizza Hut  and I are no longer friends. I would like a break from time to time.  Is it bad I get excited when is working late?  Because I love an unplanned pizza night.   The other real issue is eating at others homes.  I try to bring something for him when we visit other,  people tend to think well what can he eat??  More but less than you think.. removing the Nightshades is the hardest for flavor.. because cause tomatoes, pepers and white potatoes are out.

I really miss the red meat.. which he says is his biggest issues as well.  I could buy it and cook it for the kids and I but, then I feel guilty eating it in front of him. I was doing his diet it would be the cheese,  yea soy based cheese it kinda sucks.

Monday: Sweet potato chicken soup

Tuesday: Beginners Baked chicken, broccoli, and rice with kalamata olives

Wednesday: White turkey chilli-  Use cumin, wasabi, and white pepper for heat

Thursday: langostino lobster  scampi Gluten free pasta and reg pasta

Friday: Turkey Taco night with gluten free re-fried beans

Menu Plan Monday

mushroomsMy husband I were met to be together, because we both like odd food not always the same food but we love. Love liverwurst and my husband loves sardines.  My sons favorite vegetable is Brussels sprouts and spinach.  My daughter loves cabbage and lima beans.   My son comes home from school every day and makes fish for a snack.   Tonight my son decided he also like Liverwurst,  so the apple does not fall far from the tree.

Monday: Chicken Taco salad (corn tortilla ) Gluten free

Tuesday Split Pea Soup Gluten free

Wednesday:  Pulled pork, cabbage, and potatos

Thursday: Mango Fish, Rice, Green beans

Friday:   Shrimp and Pasta
