How to Make Easy Asia Coleslaw

How to make Easy Asia Coleslaw Salad : This up coming weekend is Memorial day.   I am also going to be out at various end of the year events for various groups.  I have to Menu plan for my busy week, including having kids over and off school, (my kids are also off for elections day.)  Summer is coming too fast,  I have to really come up with some great meals that don’t heat up my kitchen.

So as we plan for weekend parties. I love an easy salad for Memorial day.   This is a easy favorite salad, make no mayo so it does well during hot summer days.

Salad
1 1/2 cups shredded purple cabbage
1 1/2 prepared cole slaw, shredded
1 cup of shredded carrots
½ cup green onions chopped
1/4 cup sesame seeds
1/4 cup sunflower
2 pkgs. Ramen Noodles
½ cup butter

Dressing
1/2 cup sugar or splenda
1/4 cup honey
3 Tbsp soy sauce
1/2 cup veg oil
¼ cup apple cider wine vinegar

  1. Melt the butter in a saute or frying pan melted butter for Asian Cole Slaw Salad  easy

  3. Chop the green onions in the Mix the salad together , add toasted ramencarrots in Asian Cole Slaw Salad  easy
  4. Blend the dressing  in a cover lid container

Dinner Rules & Menu Planing

Dinner rules

Menu Planning I always try to make dinner a sit down event  in my house.  I might get a little lazy on Saturday but I really like the connect time with my kids.  As my children get older I always have a few rules for dinner:

Dinner Rules:

  • No Phones or text
  • Respect everyone’s time to speak
  • Have a story to share about your day
  • You must ask your parents how was their day and listen
  • Use your napkins not your pants
  • 3 bit rule- you must try everything (one try, taste, and one to decide) Food is not always cooked the same so you still have to try
  • Do not feed the dog from the table during dinner (Unless it is pizza crust and Mom is doing it)
  • No leaning back in your chair
  • Mom (and dad) gets a hug before and after dinner
  • You must eat your vegetables (I don’t care if you say you are a carnivore)
  • You must have 3 bites of meat (I dot care if you say you are a vegetarian-  and you are not you eat Bacon)
  • If you cant say anything nice then don’t say anything at all
  • No bodily function at the table (teen boy)
  • Share and answer the Question “One thing that made you smile today”
  • Everyone cleans their plate and puts in dishwasher
  • Tell the cook how good the food was and thank her for a great meal

 

This week is busy my son is on stage crew for the middle school play and we have to get out the door.

Easy Mushroom Onion Soup

Welcome spring.. it is still cold. So I am still making soup. My Easy Mushroom soup is so simple and so yummy your family will love it.  Even my son who loves the flavor of onions but not a fan of slimey onions is a fan of this soup. By  adding the mushrooms it adds an earthiness and filling to the soup.  Mushrooms cholesterol free are a great source of vitamin B and help to reduce cancer so eat up. Mushrooms are also a vitamins, minerals, amino acids, antibiotics and antioxidants. Here is an article more about mushrooms benefits .

Easy Mushroom Onion Soup

  • 6 onions
  • 4 lb of mushrooms sliced
  • 2 tablespoon butter
  • 10 cups of water
  • 1 32oz of veggie or beef stock
  • 2 tablespoon of  concentrate beef or vegetable

 

  1. Slice onions thin
  2. In a large stock pot salute onions with butter salt and pepper, when translucent add mushrooms
  3. When mushrooms are golden add stock and water
  4. Add beef concentrate
  5. Add salt and pepper
  6. Cook till broth becomes flavorful  30min to an hour.. the longer the cook the better

Try eating with fresh soft Pretzels  and Cheese (provolone or swiss)

Great to freeze for later use.

Sriracha Dressing

Sriracha Dressing:  Chipotle Dressing Copycat  homemade and spicy wonderful on any salad.  This dressing will make any salad a star similar to Chipotle salad dressing.

Everytime we go to Chipotle  I love there salads it is a Chipotle salad a crave.  I love the pull pork, cool lettuce, and spicy dressing.  So I wanted the taste at home.  I often make a pulled pork roast which is super easy. I make it at the beginning of the week and them have the yummy left over salads all week.

Sriracha Dressing

  • 1/4 cup apple cider vinegar
  • 1/8 cup or white wine or cooking white wine
  • ¾ cup of vegetable or olive oil
  • 3 tablespoons of Sriracha
  • 1 tablespoon of sugar
  • 2 tablespoons of lemon juice
  • 1/2 teaspoon of salt
  • 1 tablespoon of minced garlic
  • 1/8 teaspoon of pepper
  • 1 tablespoons of minced onions

Combined the ingredients in a lid container  shake vigorously add more Sriracha, if you want it more zesty.

This Sriracha dressing is spicy and fun.  It is savory great for on a salad with pulled pork.   Try a salad with chicken, mushrooms, beans, rice, tomatoes,  and  cheese.

As I read labels I am comparing more recently noticed a really. Every morning I make a egg white burrito,  with turkey and 1 slice of cheese on a whole wheat burrito.  Now I was looking where the burritos are in the supper market and noticed the store brand and mission brand.  Then I went down the international food isle and O found a different brand of tortillas Ortega.   I decided to pick them up and see it there were any differences on the labels.

Easy Slow Cooker Beans

Easy Slow Cooker Beans how to cook dried beans in your slow cooker the best recipe.  Quick to prep and great taste and must try dry bean slow cooker recipe.  So my latest obsession in cooking has been beans.  I have been cooking dried beans and enjoying them all week aas sides, on salads or as a main course.  I cook them on Monday,  will I start soaking the night before.  They are super simple and very good for you.  Making them from scratch you avoid the sodium found in caned beans.

Easy Slow Cooker Beans

  • 1 chopped onion 1 bay leaf
  • 1 lb of dried beans
  • 1 tbls of oil
  • 1/4 teaspoon of cumin
  • 1 tbls of salt, 1/4 of pepper
  • 1 tbls of hot sauce
  • 2 garlic cloves smashed
  • 1 1/2 cups of vegetable stock,
  • optional 3-4 slices of bacon chopped
  1. The night before place beans in a large bowl pick out any bad beans , cover with water  an allow to sit over night
  2. In the morning rinse beans with water and place in a cover pot on the stove, cover with clean water- bring to a boil and cook for 15 minutes. drain and rinse with cool water.  This cooks off any bacteria or toxins
  3. in a slow cooker place 1 chopped onion 1 bay leaf, beans, 1 tbls of oil, 1/4 teaspoon of cumin, 1 tbls of salt, 1/4 of pepper, 1 tbls of hot sauce, 2 garlic cloves smashed,  beans, 1 1/2 cups of vegetable stock, (optional 3-4 slices of bacon chopped)
  4. Cooks for 8 hours on low easy bean recipe

  • Friday Dinner for 3 my daughter choice

Menu Planning Monday : The Truth

mushroomsSo I am getting better at planning my meals.  I know I have been doing meal plans for a while but my choices have been less than stellar. So since before Christmas I have been cutting back on my sugars and carbs because I an a type 2 diabetic.  There I said it out loud, and my A1C number was bad like 5 point over what it should because I have ignored what that I have a diabetes. Been eating everything and not taking care of myself, food or exercise.

So I am going to try to watch my carbs and see how I do I am also going to nutritionist counseling and diabetic counseling  all my choice .. the doctor did not order it,  she wanted to give me a stronger drug but I said no.. I want to figure this out. So I have 3 months to get in better healthy.   I am testing my sugars daily as they prescribed.

2 weeks in I am hungry and I miss my high fat bad choice foods..like, chips, ice cream, cheese-steaks.  I know I can have a cheese-steak everything in moderation. Yea me and moderation need to become friends.

My family where it will be an adjustment.  My husband and daughter will be fine they will adjust.  But my 13year carivour son.  He is not going to be a fan of less meat, and starch.   I really hate the idea of cooking 2 meals.  This past 2 weeks I have been better at taking a small portions,  and pairing them with a large salad.

The problem for me is too many carbs at snacks –  See an small apple is 15 grams.. I really love large apples,  the big honey crisps.  Also when I am hungry I love olives.. yea they are high in sodium.

I have been prepping celery, so that is giving me the crunch. I am still a work in progress for what works for me.

I am going to end there for now because I know everyone has an opinion,  I am going to professionals and doing the lowering of my number slow and steady.
