Easy Sausage Pasta Soup

This  easy sausage pasta soup is hearty and tasty. I created this recipe for a Ragu contest but then missed the cut off to enter it this year.  So I want to share it with you.  Starts with basic soup  but you can always add any veggies to this soup. Sure to satisfy your entire family.

Easy Sausage Pasta Soup

  • 24 oz Jar Tomato Pasta Sauce Ragu
  • 1.5 pounds of spicy sausage
  • 3 medium carrots peeled diced
  • 1 medium onion diced
  • 2 celery stalks
  • 3 14 oz can chicken broth
  • 24 oz of water
  • 8 oz dried Ditalini pasta
  • 1 teaspoon thyme
  • 1/2 teaspoon salt
  • 2 teaspoon oregano
  • 1/2 teaspoon pepper
  • 2 bay leaves
  • 1 cup of arugula
  • 8oz of goat cheese

 

  1. In a large pot brown sausage, removing casing, and drain grease place on paper towel to remove excess grease set off to side
  2. In same pot add onion carrots and celery brown till carrots are tender
  3. Add to pot jar of Ragu Sauce, 3 cans chicken broth, 24 oz of water (use the Ragu jar rinse out any left over Ragu)
  4. Add back into pot drained sausage
  5. Add Spices (thyme, salt,oregano, pepper, bay leaves) to soup
  6. Bring to a slow boil
  7. Add uncooked pasta
  8. Turn to med heat and cook for 20 minutes
  9. Before serving Add arugula
  10. Top servings with Goat Cheese

Easy Mushroom Onion Soup

Welcome spring.. it is still cold. So I am still making soup. My Easy Mushroom soup is so simple and so yummy your family will love it.  Even my son who loves the flavor of onions but not a fan of slimey onions is a fan of this soup. By  adding the mushrooms it adds an earthiness and filling to the soup.  Mushrooms cholesterol free are a great source of vitamin B and help to reduce cancer so eat up. Mushrooms are also a vitamins, minerals, amino acids, antibiotics and antioxidants. Here is an article more about mushrooms benefits .

Easy Mushroom Onion Soup

  • 6 onions
  • 4 lb of mushrooms sliced
  • 2 tablespoon butter
  • 10 cups of water
  • 1 32oz of veggie or beef stock
  • 2 tablespoon of  concentrate beef or vegetable

 

  1. Slice onions thin
  2. In a large stock pot salute onions with butter salt and pepper, when translucent add mushrooms
  3. When mushrooms are golden add stock and water
  4. Add beef concentrate
  5. Add salt and pepper
  6. Cook till broth becomes flavorful  30min to an hour.. the longer the cook the better

Try eating with fresh soft Pretzels  and Cheese (provolone or swiss)

Great to freeze for later use.

Potato Sausage Broccoli Soup & Menu Planning

Potato Sausage Broccoli soupPotato Sausage Soup no milk.   I love making soup I make it all the time.  it is my go to meal if there is the slights but of rain or cold on the horizon pair it with some homemade bread,  check out my favorite recipes here.  I finds soups to stretch the budget when pay check are lean and they can make any meal go far.   This week I had Polana Polish fresh sausage left so I decided to make a lets see what we have in the fridge soups.

Potato Sausage soup with no milk

Prep Cook Time 1 hour Serves 12

  • 5 large potatoes pealed and diced
  • 1-2 lb of sausage (beef, pork I used Polana Fresh Sausage)
  • 1 lb of carrots pealed and diced
  • 6 celery stalks  cleaned and diced (no tops)
  • 2 cups of broccoli crowns fresh
  • 1 -2 med sized onions
  • 1 gallon of water
  • 1 tablespoon for Better Than Bouillon Organic Chicken Base
  • 1 teaspoon of cumin
  • 1 teaspoon of salt
  • 1 teaspoon of pepper
  • 1/4 cup of rice flour (for gluten free) or 1/4 reg flour (this is optional)
  • 1/8 cup of hot sauce
  1. Start to cooking your Mirepoix (aka onions, carrots, celery) season with salt.
  2. Add your sausage on top of Mirepoix,  Cook till cooked and slightly brown, ( don’t burn Mirepoix)
  3. Removed link allow to cook sausage to cool, cut into bite size pieces and reserved to side
  4. Add water, potatoes, spices, bullion  allow to cook- till potatoes are fork tender
  5. To thicken the soup,  you can allow the potatoes to cook,  till they start to break down they will make a thick soup (longer cook time 1 hour)
  6. OR Remove a cup or 2 of the broth and add the flour ,  stir till it becomes a water paste.. then slowly add it back to the soup (cook for another 20 minutes)
  7. Once the soup is almost done  5 minutes add Broccoli  and sausage back in.  (add hot sauce if you like heat)

Easy Seafood Chowder and Meal Planning

easy_seafood_chowder_013_001-1-2Easy Seafood Chowder  creamy seafood soup is my favorite soup.  You know what I love about cooking.  Is the discover of recipes that are passed from person to person.  Some times the recipe is written down some times it is this is so easy. This sea food chowder recipe I discovered when my sister made it for several parties.  I loved it,  she said it was her veterinarian mother in laws recipe and it is so easy.   I have discover over the years that he mother in law despite of being a vegan can really cook meats.

So before my pumpkin carving part I texted my sister and she told me the ingredients.. I did a few changes my self and served the soup it was a hit at my party.  Everyone loved it and asked for the recipe.  So I am going to share with you:

Tip buy the ingredients when on sale in the store –  this is a quick soup

Easy Seafood Chowder:

Makes 8-10 cups

Cook time 30-40 minutes stove top or 2-3 hours crock pot

  • 1 onion diced
  • 3-4 carrots diced
  • 2 stalks of celery
  • 1 brick of cream cheese softened
  • 6 cups of milk (more or less depending on soup thickness prefer ed)
  • 3 potatoes peeled and diced
  • 1 can of corn w/ juice 15.25 oz
  • 1 can Cream of Mushroom Soup, 10.75 oz
  • 1 can of can crab 6.5  oz(you can buy the expensive lumped meat or the simple can on the shelf= your choice)
  • 1 can of clams  4.5 oz(chopped or whole –  then chop the whole again size depends on amount of clams- 10-13 oz can)
  • 1 bag of frozen shrimp  uncooked 12oz or 16 oz  (tails on or off – remove tails prior to cooking-  size your choice based on expense you might want to cut if large)
  • 1 bag of scallops optional
  • 1/4 teaspoon of cayenne pepper
  • Salt and pepper to taste
  • Hot sauce to taste
  • Optional Garnish Bacon or green onions

 

How to make Seafood Chowder:

  1. In a large pan saute, onions, carrots and celery  making a Mirepoix (time saving tip use frozen mirepoix )
  2. Transfer your Mirepoix to a crock pot or large soup pot
  3. Add brick of cream cheese allow to melt (or melt in microwave for 30-1 minute till smooth) don’t burn
  4. Then dump mushroom soup, corn w/ juice, potatoes, milk in pot
  5. Add salt, cayenne pepper, pepper and hot sauce
  6. Cook till potatoes are soft (20 minutes on stove) (crock pot 2-3 hours)
  7. Then add sea food clams, crap, shrimp (tails removed and cut to bite size)
  8. Allow seafood to warm and serve.  Try it with a crusty bread
  9. Quick Crock pot you can do everything on stove and keep warm in a crock pot for a party.

Lemon Chicken Noodle Soup #TastyTues

So you have your basic homemade  Chicken Noodle Soup, but how about mixing it up for the summer,  make a light summer version.  Lemon Thyme chicken noodle.  not your average chicken noodle a cut above the rest,  also the lemon adds a little extra vitamin C.  Plus make it that left over chicken from the grocery store.  I love the pre-made rotisserie  chicken I always buy 2 when every I go to a big box bulk food store.

Lemon Chicken Noodle Soup

  • 3 celery stalks diced
  • 3 -4 carrots diced
  •  2 onions diced
  • 5 cloves garlic chopped
  • 1 bag of extra wide egg noodles
  • 2 quarts of chicken broth
  • 2 lemons (juiced)
  • 1/4 of thyme
  • 1 chicken cooked picked off the bone and diced (rotisserie kid you get precooked at grocery store) or chicken parts cut up to bite size peices
  • salt
  • pepper to taste
  • condensed chicken stock (optional)
  1. In a large pot add onions, celery , and carrots cook till translucent, salt and pepper to taste
  2. add chicken broth, bring to boil
  3. add lemon juice and thyme, extra chicken condensed stock
  4. add chicken to boil water if uncooked allow to cook till chicken is full cooked
  5. bring to boil
  6. add egg noodles for desired time required on package

Broccoli Cheese Soup #TasteTuesday

So all weekend I promised my husband my Broccoli cheese soup.  This soup is perfect for a cold night. Which was good  because I forgot to call the oil company and we ran out of heat.  So after sitting in a cold house all day wait for my husband to fix the heat, 99* after the oil truck came.  I rewarded him with  broccoli cheese soup in a bread bowl.  I know with my health living this was not a great choice.  So I had a cup”ish” and  avoid the bread.  I also Immediately pack the extra soup and sent it to a neighbor.  Using my trust weight watcher 1cup scoop I make 2 small plastic containers for my hubby to take to his job.

Broccoli cheese soup

  • Broccoli 2 heads
  • ½ gallon of  milk
  • 2 pints of half and half
  • 1 block of sharp cheddar 1lb
  • 1 onion
  • 1/3 cup flour
  • 1 ½ sticks of butter
  • 1 tsp of cumin
  • 1 tbls of worshire sauce
  • 1 tbls of hot sauce
  • 1 tbls of soy sauce
  • 1 ham steak (optional)
  • 1 chicken breast cooked(optional)
  • Salt
  • Pepper
  • 10 Bread Kaiser Rolls (optional)

 

  1. Melt 1 ½ sticks of butter,
  2. Chop onions, place in pot  with butter cook until soft, add salt/pepper
  3. Add flour over onions making a rue with opinions butter and flour
  4. Add milk, half and half, cumin, worshire, soy, hot sauces,   stir until flour breaks down and blended
  5. Wash broccoli, cut up discarding stems, add to pot with milk
  6. Bring to a almost low boil (watch milk so as not to separate)
  7. Cover turn on low stir in occasionally so the soup does not burn on bottom
  8. Cook until broccoli is tender with fork
  9. Carefully mash broccoli with potato masher, (or use a blender)
  10. Add ham/ chicken heat till they are hot
  11. Add cheese and stir in.
  12. serve in a bread bowl optional

Makes 10-12 servings.. This is a very heavy recipe
