Venison and Broccoli

Venison and Broccoli:  This week I am enjoying some much need down time. So I am making easy meals that taste great and a crowd pleaser.  This week is filled with kids off school and leisure time,  I don’t want to spend all day cooking.  So I check out what I have in the freezer.   I have some Venison in the freezer and it is a great meal to do some prep and the family loves it.

Venison and Broccoli

Venison and Broccoli

  • 2 lb of venison
  • 1/4 cup  soy sauce
  • 4 tablespoon of honey
  • 1 teaspoon of powdered ginger
  • 1 tablespoon of barbeque
  • 1 teaspoon of minced garlic
  • 1 -2 heads of broccoli
  • 4 cups of rice
  1. Trim and cut the venison in to bite size pieces removing any veins or silver skin, cut cross grain place in a gallon zip lock
  2. In a separate bowl mix together soy, ginger, honey, barbeque, garlic- mix them together and pour over meat
  3. Mush into meat  ( marinate for 4 hours  or overnight) in fridge
  4. Dinner time Start Rice  according to direction package
  5. Cut broccoli in to bite size pieces put in a saute pan with 1/4 cut of water to steam)
  6. Remove broccoli when slight tender
  7. Tum frying pan on high and cook venison in 2 batches on quick heat caramelizing meat med rare
  8.  Add meat to broccoli and deglaze the pan- add liquid to meat and broccoli and serve over rice

Menu Planning:  This is a busy week with my Superhero cape business Holiday time sales.  My Daughters rehearsals for the church Christmas.   My sons school choir concert.  I really need meal planing to keep my family feed this week.

Monday: Chicken lemon soup with fresh bread

Tuesday: Easy Bake  Ravioli lasagna

Wednesday: Crock Pot Stew with  fresh bread

Thursday: Shrimp, veggie, on rice noodles

Friday: Homemade Pizza with Quick and easy dough

Tortellini Sausage Soup with Kale

Tortellini Sausage Soup with KaleTortellini Sausage Soup with Kale : This yummy soup is a winner in my family.  It is the Tortellini  the kids love it.  The healthy kale goes down easy with this soup.  Up can mix up and use link sausage if you want or hot sausage for some heat.   It is sure to be a winner in your family.

Tortellini Sausage Soup with Kale

  • 1 lb of of ground sausage
  • 1 page of frozen tortellini
  • 4 cans of beef broth
  • 5 cups of mushroom sliced
  • Kale clean and torn
  • 1 onion diced
  • Salt and pepper
  • 3 tbl spoons of corn starch or flour doe thicken
  • ¼ tsp oregano
  • ¼  tsp basil
  1. On a large pot Sauté onion and mushroom, season as taste
  2. Remove onion /mushroom from pot
  3. In same pot brown the sausage, season meat with salt and pepper
  4. when sausage is brown drain grease
  5. Add broth, spices, onion/mushroom
  6. Bring to a boil, add tortellini
  7. Reduce to a simmer for 15 minutes
  8. Add torn Kale before serving

mushroomsMeal Planning Monday : This week is a again a busy week.  I have work all week the kids are heading to choir and after school activities. I have an event at whole food and a trip to NYC planed.  So I need to be smart and plan better.

Monday: Beef Stew

Tuesday : Spaghetti  with meat sauce

Wednesday: Slow cooker chicken and dumbplings

Thursday: Easy fish with couscous and asparagus

Friday: Taco Night

Saturday:Pizza

Chicken Corn Chowder with Bacon

Chicken Corn Chowder with BaconChicken Corn Chowder with Bacon made in a crock pot is a easy family dinner sure to be a crowd pleaser. Use those last ears of corn or frozen corn your family will love it with a heart bread. I came up with this recipe because my husband purchased corn.  I love corn on the cob but my husband is not a fan of eating it off the cob.  So I decided to make soup it was a cool chilly fall day.

Chicken Corn Chowder with Bacon

Makes 6 servings

  • 4 ears of corn or a bag of frozen corn
  • 1 can of creamed corn
  • 1 package of softened cream cheese
  • 1 can of chicken broth (2 cans if you want
  • 1 cup of milk
  • 1/2 pound of bacon
  • 2 chicken breast or left over chicken
  • 4 large carrots diced (here is how to cut the carrots like hearts)
  • 1 large onion diced
  • 2 celery stalks diced
  1. Cook your Onions, Celery and carrots till they are Tender and onions are Translucent. Or use your Precooked Frozen Mirepoix -transfer to crockpot
  2. Cut you corn of the cob, add to crock pot, cream cornChicken Corn Chowder with Bacon
  3. Cook bacon add 3/4 of the bacon to crock pot and reserve the remaining for topping the soupChicken Corn Chowder with Bacon
  4. Add milk, both, cream corn
  5. Chicken if uncooked dice and add to crock pot-  If chicken is cooked add 1/2 hour before finish time.
  6. Place cream cheese on top of all the ingredients (do not stir in until end allowing it to melt during cooking process)Chicken Corn Chowder with Bacon
  7. Cook for 3-4 hours on low-
  8. Dish into bowl and to with crisp bacon you had reserved

Easy Baked Ravioli

baked ravioliEasy baked ravioli my simple recipe for baked ravioli great meal to have the kids help make it.  My kids love baked ravioli because t is like Lasagna with out the work. You can make this meal in minute and it bakes in about 30-40 minutes depending on how many layers.   My daughter helped make this meal for my son sleep over.  We had 4 teenage boys and it was a crown pleaser and much more reasonable then pizza. It also make great left overs.  This is a great pot luck meal.

Easy Baked Ravioli

  • 1-2 bags of frozen raviolis (I use 2-4lb bags at Walmart)
  • 1-2 jars of tomato sauce
  • 4 cups of mozzarella cheese (extra needed if making large potions)
  • cooking spraymaking  baked ravioli
  1. spray a 9 x12″ glass pan or disposable dish  with non stick spray
  2. place a layer of frozen ravioli on the bottom
  3. Spoon a layer of tomato sauce over ravioli
  4. Sprinkle a layer of cheese over sauce
  5. repeat layer, ravioli, sauce, cheese
  6. Bake 30-40 minutes till bubbling easy bake ravioli

My daughter makes it complete on her own except for the placing it in the oven she loves doing it.  I love how it fills up my family.  It is always something I have in the freezer and pantry.  I guarantee you family with love this easy meal to have any weeknight.

We started with 2 different types of California Raisins  and California  green raisins.   Then we had the kids make pictures, on trays. They had a fun time creating event my 13 year old did one.  Raisins art flower

Easy Cherry Cheesecake Ice Cream Recipe: I love fresh cherries and every summer I love to capture the flavor when they are at the lowest price of the season.  This year I made my own ice cream .. cheesecake ice cream it was super easy and yummy.  I cant wait to try to make different types.

Easy  Cherry  Cheesecake Ice Cream

Easy Cherry Cheese Cake Ice Cream

I adapted the recipe from chincyshopper.com

  • 2 cups of  cherries pitted, halved and de-stemmed
  • 1/8 teaspoon of salt
  • 1 table spoon of lemon juice
  • 2 cups of heavy whipping cream (16oz)
  • 14 oz of sweetened Condensed Milk
  • 8 oz of cream cheese
  • 2 tbl spoons of sugar
  • 1 teaspoon of vanilla
  1. Cook cherries with lemon and salt over a low/med heatcherries
  2. Watch till bubbling, juice is released, and starts to thicken and remove and alow to cool  for an hour
  3. In a mixer or large bowl beat cream cheese till smooth
  4. Then add the condensed milk and vanilla- beat till smooth
  5. Adding the Heavy cream and beat till soft peaks are formed (will take a while but do not over beat)ice cream beaten
  6. Place 1/2 ina loaf pan and gently fold some of the cherries in the cream mixture.  Then add the remaining cream folding the cherries.
  7. drag a knife to make a swirl effect.cherry ice cream
  8. Cover and let chill overnight

Allow to thaw slightly prior to scooping enjoy it is very rich.
