Easy Quick Breakfast Casserole

So my 1st official week back to a full time job out of the home, in 11 years.   In the past i was running a business of my home, it is easy to start dinner mid day.  Meal Planning is becoming super important since I am out of the house.  Last week I was up Wednesday night late cutting and prepping veggies for soup for my daughter birthday.   I definitely have to do a make ahead mirepoix on the weekend.  Also precooking sausage and ground beef is going to needed to make meals happen in the evenings.

 

Easy Quick Breakfast Casserole

I did make a egg casserole for Easter brunch at church.  My daughter sang 2 services they had a brunch in the middle.  Which was lovely for all the family’s and members.   I was making my item to take-  egg casseroles at 7 am so they were hot. I used a Jimmy Dean Precooked Sausage crumbles ($3.50)  The cost a little more then cooking it yourself but I split the package between two  9″x13″ pans.  I was impressed by the ease of the pre cooked.

Here is my Quick recipe

Easy Quick Breakfast Casserole

  • 1 bag of frozen hash browns (shredded)
  • 1 Bag of Jimmy Dean Precooked Sausage crumbles  or 1 cup of ham  or 1/2 cut bacon
  • 6 Eggs
  • 1 cup of milk
  • 1 cup of cheese
  • 1/2 a small onion grated
  • 1 tbls of Hot sauce
  • Salt and Pepper  to taste (sausage has salt to easy on salt)
  1. Preheat oven to 375
  2. Spray pan  with baking spray (pam)
  3. Mix Milk and eggs in a separate bowl, Grate onion
  4. Layer Hash Browns, Sausage, Cheese
  5. Pour Eggs mixture over top and bake
  6. 30-35 or till top is golden

I ask my husband to make dinner, because I was going out to my Moms group.  Now my husband grew up in a casserole family,  which is means when he does cook most of his meals are made in one pot / dish.   He was making dinner for himself and 2 kids.

So he looks in the freezer and finds the 2 packages Hillshire Farms Sausages.  Note: I am suppose to create a recipe with them, write a blog post and then do a giveaway.  At the time I was still working  on the post in my head.

Well he was so helpful, he took the Hillshire farms and made dinner.. (there goes my blog post..)  When I called to check he said he was using both packages..

I said  “honey.. there for a tasty tues blog post”..

He said “Too late.. they are defrosted and I am using them”

He said “I will take pictures for your post”…(he is not me with a camera.. But I love him because he tried.. he could have cleaned of the stove before the pictures)

Husbands Cheese Rice and Sausage Dinner

Serves 8 people : He was making dinner for himself and 2 kids.

He wanted to add a can of tomatoes but worried the kids would not eaten it. (My advice ADD the Tomatoes or serve with a tomatoes) or add any vegetable broccoli would have been yummy.. What is it with men and veggies or lack their of?

I say to myself   ” Just be happy he is cooking, and don’t criticize”

His directions

  1. Make rice as directed- 2 cups of rice with 4 cups of  water-  cook thoroughly
  2. Mix rice,  (veggies if you choose) and soup in large glass pan
  3. cook 15 minutes
  4. Lay Hillshire Farm Sausage on top
  5. cook 10 minutes  sprinkle with cheese

I was very yummy! I has some when I returned home and we had left overs for the next few days.   The sausage was amazing,  I would love to use it in a Potato and Sausage soup.. (now I think of a recipe- me slapping head)

Cabbage Casserole Healthy St. Patricks Day

St. Patrick’s day is this weekend. I grew up eating Corned Beef and cabbage,  my mouth is watering.   I love corn-beef and cabbage but  I am trying to be healthy.  The vegs cooked in the corned-beef fat add flavor and unwanted calories.  So I came up with a way to get the flavor with out the fat and grease.   The key is the cumin, which gives the depth of flavor.

Cabbage Casserole
• 4 potatoes peeled sliced thin 1/8”
• 1 head of cabbage remove outer layer slice thin
• 3 carrots sliced thin 1/8”
• 7-9 Brussels sprouts sliced
• 1/2 can of chicken stock (healthy) or ½ stick of butter
• Cumin (sprinkle)
• Salt
• Pepper

1. Preheat oven 350 degrees
2. Slice potatoes place on bottom of dish
3. Layer cabbage then carrots
4. adding salt pepper , cumin to taste each layer
5. Layer potatoes, cabbage, carrots finish with Brussels sprouts.
6. Pour butter or chicken broth over top
7. Place in oven and cook for 30min or till fork tender
